The Mountain Water Process to decaffeinate coffee is a natural process. It uses the pure water from the glaciers of Mexico. The beans are immersed in the this pure water to remove the caffeine. The water will contain all the soluble elements of the flavor and this ensures the beans maintain their original components. Caffeine is a hot commodity, and is added to everything from cake mix to ice cream and low grade chocolate. When they decaffeinate coffee, the salvage the caffeine and sell it. The water will pass through a special filter to remove the caffeine. The result is "coffee solid soluble charged water" saturated with the flavor.
